Food tastes different at sea. The Open Waters Gourmet Passage is a three-day, two-night floating culinary retreat that takes fine dining out of the restaurant and onto the open waters of Singapore's southern seas, where every meal is an occasion and every view is the ideal table in the house.
The Experience
Departing Marina Bay on the first morning, the vessel sails out to a series of scenic offshore anchorages across the three-day journey. Each day onboard is anchored around a distinct cuisine concept, brought to life by a rotating roster of guest chefs who come aboard to craft and present their menus personally.
Day one celebrates the rich, spiced flavors of Peranakan cooking, a cuisine born right here in Singapore from centuries of cultural exchange. Day two shifts to modern European, with refined plates and thoughtfully chosen wine pairings served as the sun sets over the open strait. Day three rounds out the voyage with an Asian fusion menu that draws from the diverse culinary traditions across the wider region.
Between meals, guests are free to relax on the open deck, take a dip in the surrounding waters, or join optional guided conversations with the guest chefs about the stories and techniques behind each dish. Evenings are unhurried, with soft music, good company, and the quiet rhythm of the sea setting the tone. Private cabins offer a comfortable retreat each night before the next day's culinary journey begins.
